I love avocados. And for good reason! They are healthy, delicious and easy to add to foods or to simply eat on their own. Avocados would definitely be my “survival island” food – if I had to pick only one food to eat if I was going to be stuck on an island, avocados would be it. So, naturally, when I came across this recipe for avocado fries I knew I had to make it!
They are beyond easy and incredibly tasty. This would also be a great recipe for kids because you have to dip the avocado slices into the mixtures and you’re hands get messy. You could eat them like a snack, put them on salads, put them in sandwiches… the possibilities are endless!
Hope you enjoy and let me know what you think!
2 ripe avocados
3/4 c. panko bread crumbs
1/4 c. nutritional yeast
salt and pepper (maybe a dash of cayenne if you’re feeling spicey)
1/2 c. unsweetened milk (I use almond)
3 tbsp flour
1. Preheat your oven to 400. Cut your avocados in half, remove the pit and carefully scoop it out with a spoon. Quarter each half (or into 6 if its a big avo).
2. In a bowl combine panko, nutritional yeast and salt and pepper. In another bowl whisk together almond milk and flour.
3. Dredge each slice in the milk mixture then in the breadcrumb mixture making sure it’s evenly coated. Put on a baking sheet. Repeat until they’re all done.
4. Bake for 20 minutes until golden, flipping once.
