Kale Noodle Bowl With Avocado Miso Dressing

I love kale. And avocados. And soba noodles. So this recipe is pretty perfect. It’s simple, delicious and doesn’t leave you feeling heavy. Recipe below!

1 small bunch kale

1 7/8 oz package buckwheat soba noodles (these are gluten free)

1 ripe, medium avocado

1 clove of garlic (medium)

1 tablespoon extra virgin olive oil

3 tablespoons white or chickpea miso

1/2 lime

sesame seeds to garnish (optional)

Vegan General Tso’s Tofu

When I was in high school, I worked part time at a Chinese restaurant and when things were slow, I was able to learn a bit about how to cook Chinese food. General Tso’s is one of my favorite dishes and even though getting take out is sometimes easier, it’s nice to see the dish from start to finish. Hope you enjoy!

Vegan Tofu General Tso’s Tofu:
(serves 2-3)

Ingredients
1 16-19 ounce package of extra-firm tofu (frozen, then thawed)
1/3 cup flour (or more if needed)
1 cup of steamed broccoli ( if desired)

Sauce
1 Tbs finely minced or shredded ginger
1 Tbs minced garlic
2 Tbs soy sauce
1 Tbs white vinegar
1 Tbs white wine
4 Tbs vegan sugar or agave syrup
1 cup water
1 tsp crushed red pepper flakes (more or less to taste)
1Tbs & 1 tsp corn starch mixed with 2 Tbs water
