Recipe for Roasted Pumpkin Seeds

Fall is my favorite time of the year! After you enjoy picking out your pumpkin to carve, the fun doesn’t stop – you can use the seeds from the pumpkin for a tasty snack. Enjoy this recipe for roasted pumpkin seeds:

Directions:
1.  Rinse pumpkin seeds under cold water and pick out the pulp and strings. (This is easiest just after you’ve removed the seeds from the pumpkin, before the pulp has dried.)

2.  Place the pumpkin seeds in a single layer on an oiled baking sheet, stirring to coat. If you prefer, omit the oil and coat with non-stick cooking spray.

3.  Sprinkle with salt and bake at 325 degrees F until toasted, about 25 minutes, checking and stirring after 10 minutes.

Vegan candy corn

Halloween is only a few weeks away so I thought this would be the perfect time to post a recipe for vegan candy corn. Most packaged candy corn typically has gelatin, egg whites, etc. and that’s rather scary (Get it?) so here is a recipe for cruelty free candy corn that won’t make you scream (Sorry, couldn’t help myself). Ingredients: 
1 cup sugar 
 
2/3 cup corn syrup (preferably organic, avoid high fructose corn syrup!) 
 
5 tablespoons Earth Balance (or other vegan margarine) 
 
1 teaspoon vanilla extract 
 
2 1/2 cups powdered sugar 
 
1/3 cup powdered soy milk 
 
a pinch of sea salt 
 
Red & yellow food coloring
