I found this recipe for peanut butter cup caramel apples on Pinterest from the lovely Kathy Patalsky of Healthy. Happy. Life and I was drooling just reading the title. Can’t wait to make these!

While visiting my family in Maryland over the holidays, my Mom made me vegan peanut butter fudge. I thought I would spread the wealth and share the recipe, since it’s only three ingredients and very easy!
1/4 cup and 2 tablespoons vegan margarine
1/2 cup peanut butter
1-3/4 cups and 1 tablespoon confectioners’ sugar
1. Lightly grease a 9×9 inch baking dish.
2. In a saucepan over low heat, melt margarine. Remove from heat and stir in peanut butter until smooth. Stir in confectioners’ sugar, a little at a time, until well-blended. Pat into prepared pan and chill until firm. Cut into squares.
