One of my Twitter followers sent me this recipe (originally posted on Taste.com.au) and I knew I just had to make it. Only 6 ingredients and the prep time is almost zero, how could I resist? Hope you enjoy!
- 100g dried wholemeal spiral pasta
- 300g can four bean mix, drained, rinsed
- 1 medium tomato, chopped
- 1 medium avocado, chopped
- 20g baby spinach
- 1 tablespoon balsamic dressing
- Cook pasta in a saucepan of boiling salted water, following packet directions, until just tender. Drain. Transfer to a large bowl. Set aside to cool.
- Add bean mix, tomato, avocado, spinach and dressing to pasta. Toss to combine. Serve.

Rachel lost an incredible 90 pounds less than a year after going vegan. She cut meat from her diet because of her love for animals and then after reading books promoting plant-based nutrition, she started looking at eating from a new perspective. She then realized that animal products were not necessary for good health and she completely cut out animal products.
Losing weight wasn’t the only change Rachel noticed. She says that she doesn’t get as much as she used to and her skin is much clearer and she has more energy. What’s her recommendation for those trying to get fit/healthy too? Rachel says, “Stay away from processed foods as much as possible and focus on eating nutrient dense foods (i.e. greens, beans, fruits). There are a lot of great blogs and Facebook pages with vegan recipes, and it’s a great place to network and connect with like minded people.”
